Holyrood Distillery was founded in 2019 by Rob and Kelly Carpenter, founders of the Canadian branch of The Scotch Malt Whiskey Society, and former Macallan Master Distiller David Robertson. This is the first single malt whiskey distillery to open in the center of Edinburgh in about 100 years. Although it is a young distillery, it has been awarded ``Craft Producer of the Year'' at the ``Icons of Whiskey Scotland 2022'' sponsored by Whiskey Magazine. Connor O'Kiffe, the distiller in charge, read a book by Masataka Taketsuru, known as the father of Japanese whisky, learned that Taketsuru came from a sake brewery, and decided to use sake yeast to ferment whisky. What would happen? This is a new make-up product born out of this quest. Limited edition product commemorating World Whiskey Day 2022. A fruity ester aroma derived from sake yeast and a slightly smoky aroma. The savory and sweet taste of the biscuits is accompanied by a slight smokiness. |
