Holyrood Distillery was founded in 2019 by Rob and Kelly Carpenter, founders of the Canadian branch of The Scotch Malt Whiskey Society, and former Macallan Master Distiller David Robertson. This is the first single malt whiskey distillery to open in the center of Edinburgh in about 100 years. Although it is a young distillery, it has been awarded ``Craft Producer of the Year'' at the ``Icons of Whiskey Scotland 2022'' sponsored by Whiskey Magazine. A smoky new make using 50% heavily peated Islay malt, based on "Made by Edinburgh", which uses Brewer's malt and Brewer's yeast. A well-balanced blend of smoke from Islay malt, biscuit-like flavor from Maris Otter malt, sweetness from amber malt, and citrus flavor from Norwegian Kerwick yeast. |
