We offer a wide variety of shochu made using a variety of techniques, including the introduction of new technologies such as freezing point filtration, storage of turtles in caves, and storage in oak barrels, even if they are made from the same raw materials.
Fujii Sake Brewery is a long-established brewery in Oita that was founded in Mizuike, Notzu Town in 1896 under the trade name Manrikiya.
Seishu Ryubai has a reputation for its technical ability, winning gold awards at competitions almost every year, and is a favorite drinker in the local area.
In addition, in 1999 we obtained OCPP organic certification and began making organic barley shochu, and in 2006 we created "Cave Jar Organic Barley Shochu Bungo no Sato", and are continuing to take on further technological innovations.
Our company is a brewery with a history of 140 years, and successive generations of brewers have honed the manufacturing techniques of sake and shochu.
We believe that the taste of local sake is shaped by the local cuisine, ingredients, climate, and the people who grew up with them.
When looking at the world of distilled spirits, it is a well-known fact that the aging process after distillation for both brown and white liquors is important in improving the quality of the product.
The most important thing for the aging of alcoholic beverages, not just shochu, is the environment.
