Oimatsu Sake Brewery
Creating shochu that will make the world go “aha”.
The blessings of nature nurtured in the peaceful mountains of Hita, and the clear natural water filtered through the abundant cedar forests, are the source of the creation of genuine products.
Long-term storage in oak barrels, which we have learned from countries with advanced barrel aging, and a commitment to koji...
- Passion for “barrels”
- We are busy researching storage barrels.
- Commitment to “Koji”
- As we named our main brand Kojiya Denbei, we have an extraordinary commitment to koji.
The story of making shochu — men fascinated by barley
In the mountains of Hita, Oita Prefecture, there are men who are fascinated by wheat.
Oimatsu Sake Brewery Floating in the Sea of Mugi
"Now, the long journey begins."
As the wheat harvest season approaches, the area around the factory turns golden yellow, and the mountains of Hita, which contain an inexhaustible amount of underground water, loom in the background.
Encounter with new wheat
“This guy drinks a lot of water.”
Wheat has arrived from the wheat mill.
Koji making
"It's so well done that it makes me smile!"
It was just a good soak.
Steam the barley for about 2 hours.
With admiration, I opened the drum door and sprinkled the seed koji. Ono operates the drum mouth absentmindedly, hoping to make good koji. I'm sure you'll have a good koji in two days.
Two days later, in the morning, Koji Drum's fans roared.
Preparation
“Yeah, it’s a powerful fermentation!”
This is a new preparation tank starting this year.
The second issue will continue for another 10 days.
distillation
“No matter how many times I visit this place, it’s profound!”
The sound of the distiller's vacuum pump began to be heard.
I think it would be better for a woman to make a decision and stick to it faithfully.
Before storage
“Later makeup doesn’t suit this guy!”
The finished Enma unprocessed sake.
Filter lightly.
ripening
"I've done everything I needed to do. Now all I have to do is wait!"
Once the flavor and aroma have been perfected, Enma Genshu is lightly aged in stainless steel tanks, and then goes on a long journey of aging in white oak barrels.
A barrel-aged, easy-to-drink type.
