One of the major characteristics that determines the unique taste is the water used to prepare the wine. Rain falls on Mt. Duncan, passes through volcanic rock, and is filtered through Jurassic sandstone.
Therefore, the brewing water pumped on-site is rich in minerals, and by using it for fermentation, a very fruity whiskey is produced.
This brewing water is used in all processes, including adding water, and gives Isle of Raasay's whiskey its unique sweet flavor.
Another unique feature is barrel aging.
All spirits are aged and bottled in warehouses on the island, taking full advantage of the Hebridean climate.
Excellent balance of very rich dark fruit flavors and lightly peated.
