Only the highest-quality shochu is brewed using water from the evergreen forest that spreads in the central part of the Osumi Peninsula, and from the Osumi-produced sweet potato ``Golden Sengan,'' which is brewed in a jar using white malt. It is made by storing and maturing in selected jars.
