Sake is born where people gather, and each region's climate deepens its flavor. If you trace the history of alcohol, you will find yourself tracing it all the way back to the time of the gods.

During the Asuka and Nara eras, when Japanese culture began to mature, sake was already produced and enjoyed. The statement ``33 koku 3 sho 2 go of sake, 28 koku 60 3 sho 2 go of soup, and 5 koku of slag" is preserved in the Shosoin text, and there are two types of sake: refined sake and slag sake (orizake). It can be assumed that. Eternal years are quietly sleeping in every drop of sake.

Since ancient times, Kyoto has been the center of sake production. It was in the 28th year of the Meiji era that Saito Sake Brewery was born against the background of this distant passage of time. The ancestors of the Saito family moved to this area from Senshu during the Genroku era and ran a kimono business as Izutsuya Ihei, and continued to inherit and protect this long-established store for eight generations until turning to the sake brewing industry.

At the time, the trademarks were Yanagi Masamune, Otaka, etc., but in commemoration of Emperor Taisho's grand ceremony, the name was changed to ``Order of Great Britain''.
