We are aware that we are a traditional company nurtured by the culture of chrysanthemum sake,
Based on the recognition that alcohol is the essence of culture,
Providing richness to people's lives through alcohol and food.— Kobori Sake Brewery Corporate Philosophy —
Located in the production area of ``Kaga Kikuzake'', one of Japan's three famous sakes that was already famous in the Muromachi period, we are particular about using raw rice such as Yamada Nishiki from the Kuchikyoshi River in the special A area and Hokuriku No. 12, a specially contracted rice. The excellent brewers of Nanbu still produce sake with a rich and robust taste using a method that is mainly handmade.
Forest Ginjo Brewery Hakusan
Mori no Ginjo Brewery Hakusan was completed in the fall of 2001 in the Kawachi district of Hakusan City, Ishikawa Prefecture, overlooking the Tedori River.
This area was a cedar forest until the storehouse was built. All the cedar trees felled for construction were used as construction materials for this building, making it a wooden structure that can be used for a long time.
This sake brewery was created with the desire to create quality sake in a quiet brewery blessed with water and nature, which is necessary to establish a 21st century hand-made brewery and continue to make authentic sake.
This sake brewery is equipped with equipment that reduces the labor of the craftsmen and allows them to focus on the essence of sake brewing. The latest brewing equipment supports the high-quality sake brewing that takes care of the hearts and hands of our craftsmen.
