Sake brewing at “Sawanoi”

Origin of sake name

The location of ``Sawanoi'' used to be called ``Sawai Village,'' and it was named after that place. ``Sawai'' is a place name given to the place where the rich famous water flows in the form of a stream.

Creed of sake brewing

Since ancient times, people have brewed sake as an offering to the gods. As an intermediary between gods and humans, alcohol plays an indispensable role when people wish for happiness in the world and pray for a rich harvest. Therefore, sake brewing is a pious ritual that requires the strict dedication and dedication of the brewers. We believe that truly heartfelt sake can only be produced through serious consideration and careful craftsmanship in preparing each bottle. Water gushes out from the depths of a cave carved out of the Chichibu Paleozoic bedrock, the mountains and lush greenery, the clear air of Okutama, the finest raw rice, and refined techniques. Sawanoi's belief is that it takes the sincerity and hard work of the entire company to bring all of this together and create a single drop of delicious sake. As long as there is rice in Japan and famous water in Okutama, Sawanoi will continue to make delicious sake.

From the brewer

There are no absolutes when it comes to sake brewing. However, in order to continue searching for that impossible ``absolute'', we must approach sake brewing with an aspiration to improve this year from last year, and from this year to next year.
