A vinegar brewer that continues to follow traditional manufacturing methods that have been around since the Edo period.

Tobaya Suten is a long-established brewery located in Obama City, the center of Wakasa, which flourished as a castle town during the Edo period. The current head of the family is Mr. Takayoshi Nakano, the 12th generation. For generations, we have stubbornly followed the traditional manufacturing method using old-fashioned pots, and are dedicated solely to making vinegar.

All products are free of preservatives and colorants. With the motto of adding as few extra ingredients as possible, we strive to create products that are truly delicious and that our customers can enjoy with peace of mind.

In recent years, we have been actively working on developing regional brand vinegars, drinking vinegars, and ponzu sauce, and we are also manufacturing and selling custom-made seasonings for customers such as Japanese cuisine and restaurants, as well as producing and selling vinegars in France, Taiwan, Singapore, and South Korea. We have also started doing business with other countries. In France, even three-star restaurants use Tobaya Vinegar.
